Gourmet Scrambled Eggs

This morning I slept in, flipped through old Facebook pictures, daydreamed, searched my current thoughts, and finally decided I was hungry.  I peeked in the refrigerator and didn't see much, but I did remember a concoction from last week's Italian (Giada inspired) pizza pockets that still remained.  The filling for those pizza pockets was ricotta, spinach, rosemary, dash of cilantro, garlic, and turkey sausage.  I decided that mixed with eggs, this would make a fabulous Saturday breakfast. I'd never heard of all of these together with eggs but thought it was worth a shot.  After pan frying it all and adding fresh baby tomatoes, I sat down to take my first bite.  My experiments don't always turn out, and I was a little worried.  However, this really did taste pretty good, as the rosemary stuck out and tomatoes balanced well with the cheese.  Mushrooms would have made the perfect addition, but since I didn't have any, I went to the cabinet to grab my truffle oil from Italy.  I brought back a small bottle for use in special occasions, but sadly I couldn't get it open.  I'll have to remember to ask someone to open it the next time we have guy friends over.  Overall, I was really pleased with how this breakfast dish came out, and it really was very easy, especially since it was reusing some leftover filling.  I'll have to see what else Giada is going to inspire me with her show...
